Protein-Packed Breakfast Muffins for Busy Mornings

Ever since back to school season has re-started, it has become more difficult to eat enough protein at breakfast time to keep me satisfied. During the summer months, it wasn’t unheard of to whip up a full breakfast that featured eggs, toast, fresh fruit, and more. But with my daughter’s school bus picking her up at 6:40 AM and work ramping up shortly thereafter, the notion of dirtying pots and pans to create a meal before the sun comes up is not appealing and, quite frankly, simply not happening.



But instead of skipping brekkie because of time constraints, I have been prepping some grab-and-go breakfast options over the weekend to help me sneak in some extra protein — no pots and pans required! And one of my favorites is my protein packed muffins with a secret ingredient — Naked Goat Protein Powder.

Protein-Packed Breakfast Muffins

Using Naked Goat protein powder, I can make muffins that have added protein to help keep me satisfied during the morning time. Plus, this addition ensures my body is being fueled with all of the essential amino acids my body needs. Here are two go-to recipes I have been enjoying:

Protein-Packed Blueberry Muffins



Ingredients:

1 cup all-purpose flour

1/2 cup vanilla Naked Goat protein powder 

1/2 cup granulated sugar or sweetener of choice

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup milk of choice

1/4 cup melted coconut oil (or any oil)

1 large egg

1 tsp vanilla extract

1 cup dried blueberries

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray with cooking spray.

  2. In a large bowl, combine the flour, protein powder, sugar, baking powder, baking soda, and salt. Mix well.

  3. In another bowl, whisk together the almond milk, melted coconut oil, egg, and vanilla extract until fully combined.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix. Gently fold in the blueberries.

  5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.

  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  7. Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Chocolate Protein Muffins Recipe

Ingredients

  • 1 cup all-purpose flour 

  • 1/2 cup chocolate Naked Goat protein powder 

  • 1/2 cup cocoa powder 

  • 1/2 cup granulated sugar (or a sugar substitute) 

  • 1 teaspoon baking powder 

  • 1/2 teaspoon baking soda 

  • 1/4 teaspoon salt 

  • 1/2 cup milk

  • 1/4 cup melted coconut oil 

  • 2 large eggs 

  • 1 teaspoon vanilla extract 

  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

  2. In a large bowl, whisk together the flour, chocolate Naked Goat protein powder, cocoa powder, sugar, baking powder, baking soda, and salt until well combined.

  3. In another bowl, mix the milk, oil, eggs, and vanilla extract until smooth.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. If desired, fold in the chocolate chips.

  5. Divide the batter evenly among the muffin cups, filling each about two-thirds full.

  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

  7. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
